Peach
Cobbler
1/2 cup butter
1 cup milk
1 cup all-purpose flour
1 cup sugar
1-1/2 tsp baking powder
2 cups peaches, peeled
& sliced, reserve juices
1/2 tsp salt
Preheat the oven to 350
degrees. Put the butter in a 9 by 13 inch overproof serving dish and place
in the oven to melt the butter. Mix together the flour, baking powder,
and salt in bowl and stir in the milk and sugar to make a batter. Remove
the hot dish with the melted butter from the oven and pour in the batter.
Spoon the peaches and the juices evenly over the batter. Place the dish
back into the oven and bake until batter is browned and has risen up and
around the fruit, about 30 minutes.

Onion and Bell Pepper Salad
3 large Vidalia onions,
sliced
3 bell peppers, cored,
seeded, and sliced preferably, 1 yellow, 1 red, and 1 purple
Dressing:
1 C. peanut oil
½ C red wine vinegar
½ t. chopped fresh
basil
1 t. fresh lemon balm,
fresh
1 t. chopped rosemary,
fresh
1 t. chopped thyme, fresh
1 t. chopped parsley, fresh
1¼ t. Dijon mustard
Salt & pepper
Place the onions and peppers
in a large bowl. To make the salad dressing, mix all the ingredients
in a food processor. Pour over the onions and peppers and toss once before
refrigerating. May be eaten right away, but is best to make a day head.
