Recipes



Weakfish Croquettes
1 lb cooked weakfish    
6 cooked mushrooms
2 eggs, separated     
Breadcrumbs
1 egg, beaten      
Flour 
Butter       
Fresh parsley
Salt and pepper     
1 tbsp butter

Mix 1 tbsp of butter with 2 egg yolks. Add chopped, cooked mushrooms, chopped, cooked fish, parsley, salt and pepper together. Beat the egg whites stiff and combine. Place on a board and form croquettes in pyramid shapes. Roll them in flour; dip in beaten egg and sprinkle with breadcrumbs. Fry in butter. Pour over them, tomato sauce or Bordelaise sauce.

Clams Marinara
6 dozen small clams
1 cup dry white wine
1 large onion, chopped    
1 tsp dried thyme leaves
1 bay leaf      
1 tbsp fresh parsley, chopped
1 tbsp butter      
Freshly ground black pepper
1 jar Marinara Sauce

Scrub clams well and place in a large kettle with remaining ingredients. Place over medium heat and steam until clams open. Discard any un-opened clams. Serve with Marinara Sauce over them.
