Product Name: Lighter Bake

Description: A new fat substitute that is 100% fat free. Lighter Bake replaces butter, shortening and oil, resulting in lower saturated fat, cholesterol and calories while adding nutritional value to baked products.

Puree: A blend of dried plums and apples.

Powder: A blend of dried plums and pears.

Applications: For quality fat-free or reduced calorie: breads, muffins, brownies, cakes and cookies.
 


Substitute applesauce or prune puree for oil. The ratio is 100% 1c. oil = 1c.  Applesauce and/or prune puree.

Sometimes prune is too strong, so another kind might work better.  Baby food is a good substitute for prunes and it comes in a variety of flavors; e.g., banana, apples, peaches, pears, as well as fruit combos, just to name a few.  Just pick the flavor to match whatever you're making.

A good rule of thumb when substituting purees for oil is to start with 1/2 the
recommended amount of oil & half puree.  If the taste & texture are satisfying to you then gradually decrease the amount of oil the next few times you make the recipe, until  you get the desired effect.  Some recipes don't take well to substituting straight puree for all of the oil
 


Use no-fat yogurt instead of sour cream.

When a recipe calls for cream/milk, you can go down a level. Following are the levels, and the % fat in each:

heavy cream -- 30%
light cream -- 15-20%
half-and-half -- 5-10%
whole milk -- 4%
skim milk -- 0%

Going from heavy to light cream is over 10%, which may be noticealbe; but whole to skim milk is only 4%; not much difference in baking. (BTW, in soups its another matter.) Dropping fat % by levels until you like the results works well here as well.
