Pea Side Dish for Wigilia

1 pound of dried WHOLE peas
Rinse peas and place in large pot. Add enough water to cover peas. Add two to three pieces of whole cloves of garlic. Add one tablespoon of salt. Check flavor of peas as they get softer and add salt to taste. Bring the water to a boil and then lower to simmer. Start this early in the day because it usually takes all day to cook. Keep watch and add water as peas begin to absorb it and get softer. Stir often. Once peas are cooked thoroughly add two to three tablespoons of margarine. Mix and serve with sauerkraut and pierogies.
